Happy Call Pan Recipe - Spanish Omelette

Ever since my trip to Barcelona, the simple Spanish Omelette has caught my attention as a beautiful breakfast food or tapas item. I have been thinking of recreating this dish for ages but because of the huge size of the dish it took a party to make an attempt at it. I used little oil with the base from an earlier steaming of sausages and wiped the top part of Happy Call Pan later with Olive Oil when I had to flip. Enjoyed this meal a lot, tho it I think I have to experiment again to make this thicker, and add more oil. 

Ingredients
5 large eggs 
1 tablespoon water to egg (recommended by expert) 
5 potatoes
1 onion
Salt and pepper to taste

Directions
Chop up onion and potatoes
Fry both till soft on low heat till almost cooked
Add in egg mixture (egg, salt, pepper, water)
When cooked, scrape base to allow an easier flip to other side

Lessons learnt
Some recommend to take potato and onion out and coat in egg mixture
Better use oil on both sides so won't stick
If the pan stuck flip back again at the end to show the nicer side





Happy Call Pan Recipe - Korean Spicy Braised Chicken

I think I am beginning to figure how to cook with my Happy Call Pan. This time I wanted some zing with my meal. I decided to purchase a bottle of Korean spicy sauce for braised chicken at the nearby Korean Lotte Mart at Telok Ayer Street. I was pretty impressed with the result even though I did not add potatoes as the recipe suggested.


Korean Spicy Braised Chicken Recipe using Happy Call Pan
1 cup water bring to boil
2 tablespoon of Korean sauce 
2 tablespoon of soya sauce
Dash of sugar 
Chicken thigh

Once water boils, add in chicken and sauces and let everything simmer till sauce almost dries up, this takes around 20 minutes or longer if you have the time. It's tasty and yummy so much that I wanted to slurp up the sauce!


Happy Call Pan Recipe - Steam Salmon

Although the proper way of steaming would be to add a plate into the Happy Call Pan, the thought of having to wash another plate meant more time wasted in cooking, hence I experimented if the same steaming effect will work without an added plate and it does! 


Steam Salmon Recipe using Happy Call Pan
1 cup of water to boil 
Add in salmon 
Squeeze in lime or lemon
Add in spices (any spice you prefer example black pepper, herbs, thyme)
Add in 1 tablespoon soya sauce (optional)
Cook until fish is cooked through around 10-15 minutes

Such simple cooking and such a healthy fare than you can have it as often as you like! 

Happy Call Pan Recipe - Tamago

Using a Korean pan to cook Japanese Tamago egg is an interesting experiment, like the pairing of 2 major cities. I needed to clear my eggs one day and decided to try cooking Tamago using the Happy Call Pan. The result came out okay, but I had forgotten seasoning, and poured too thick between layers, so hence this requires another try. 


Tamago Recipe using Happy Call Pan
5 eggs
2 tablespoon Mirin
Pepper, salt, sugar to taste

Wipe pan with some oil. When it heats up add in a small layer of egg, when it is about to fully cook, flip half the egg to one side, and on empty side add more egg. Repeat process until egg mixture all finished. How simple is this meal! Add in some salad and this will be one simple Fusion meal cooked in under 15 minutes.

TCM cupping at TCM@Novena

I have recently tried TCM cupping at TCM@Novena, Bodywork Medicare Pte Ltd, Novena Specialist Centre, and I must say this program is probably faster and cheaper than many of the other methods I have tried over the years.

With such a foodie nation like Singapore, where hotel buffets abound, where dining at hawker centres will often blow a daily calorie counter off the charts, where taking food pictures is a common interest - you seriously wonder how a Singaporean actually stays trim. So I am not surprised one is often on the lookout for some way to shed some extra kilos.

As for myself I have tried a few ways to lose weight in my lifetime, and my conclusion is, some will work, some won’t. This is fine, as long as you keep trying.

A few weight loss programs I have tried are:
TCM cupping at TCM@Novena  Bodywork Medicare Pte Ltd
Gym training with a personal trainer
Eating clean with Dr Oz 2 week rapid weight loss program
Eat stop eat program
Juice fast with Chorella
Slimming package at a slimming center

So all in all, I must have spent over $30K in my life time seeking ways to lose weight. When 2 of my friends initially started on this program, one to shed 5kg, another 8kg, I was not impressed as after hearing about the food/water program, I knew it was possible to drop the calories, and the fact they were rather slim. Only when a third friend tried it, and had shed 8kg in 2-3 weeks I decided to give this a shot. Nothing to lose (apart from kilos and cash), but everything to gain, i.e. health and vitality.

The first visit to TCM@Novena would be an explanation by the therapist (Li Ping) on what is involved in the TCM cupping program, she will tell you that it is not easy but worth it. That if you want to do her program, then follow her suggestions, otherwise don't sign up. Once you have decided to go along with the program, then you will have to go for 3 consecutive days to open your points, subsequently, it will be 1-3 times a week, each time going only if you have lost a minimum of 200g. I understand the concept of cupping which is to get rid of toxins in the body, and the food/water program is to aid the process.  The restricted food and water program is probably the most challenging, in particular the first 1 week where you are struggling with old habits. Old habits will come back time and again, and it’s the weekly cupping that helps. Hence, the therapist recommendation is to be obedient, do it faster, so the program is quickly over and done with. As it is an open concept where every female in the room is down to their undergarments, be prepared to wear your nicest undergarments when you are there for the first time. There is also a smaller room for men interested in the program. 

Food/water program:
Morning:  1 slice wholemeal bread or 1 hard boil egg
Lunch: 30% of your food intake (preferably meat)
Dinner: Fruit (choose one: half of guava, half of dragon fruit, half of apple, half a kiwi, blueberries)
Water: no more than 250ML

The TCM cupping program at Novena runs on the number of kilos you want to shed either a 3kg or 5kg package. So if you have 10kg to lose, you will sign up first for 5kg, and when it’s completed, you sign another 5kg (no hard selling involved whew!)

TCM@Novena cost for TCM program:
3kg $500
5kg $800

Exercise is not necessary, but if you can (without compromising on water intake), by all means. That to me meant window shopping in malls or biking in the gym.

Each time you go to TCM@Novena, you will only need to spend 20 minutes in therapy. Hence this weight loss program is definitely very useful for busy working professionals who hardly have the time to exercise. And also for those who don’t like to exercise! I know of so many friends who want to shed that final 3kg or 5kg, and spend years trying to do it, but now finally this can be done within a month or even less.

After you have finished the program, the therapist will close the points and you have to continue with another 2 weeks of the food/drink program, hence do factor 2 weeks in.

I have since completed 10kg in 2 months, and my thoughts after shedding the weight is that I am glad to have gone through it, the time taken and amount spent is much lesser than any of the programs I have gone through. Although, I could have done it much faster, by restricting my food intake more, I did not, and this afforded me with opportunity to still go out with friends for brunches/lunches. My challenge would be that over the weekends, I would tend to put on 200g-500g because of additional food/water intake, so I would spend a few days in the week burning it off by skipping breakfast/dinner and just sticking to lunch. It's the least ideal situation but it helps keep my sanity. The best suggestion before starting the program is to clear all your makan appointments and just concentrate on losing the weight for the next 1-3 months. 

As a result of this program, I have also begun to pack my lunches, either salmon or chicken on most days, the reason being hawker food comprises of mostly carbohydrates which don't keep you full for long. Life is also definitely much better, lighter.

6 months later...
After 3 months on the TCM program you may begin to experience more than normal hair loss, so I would suggest limiting the program to no more than 3 months, break and go back again if needed. I had stretched this far too long for about 5 months and though I did manage to loose 14.1kg, but at an expense of my hair. With the festive period, I gain some of the weight, so as much as possible keep to the same schedule of food as recommended.

1 year later...
I have put back most of the weight because I went back to my old eating habits. I would suggest anyone who wants to embark on this program, should only use it as a kick start. Thereafter, it is important to eat similar quantities of food as suggested otherwise if you go back to the old ways of eating, you will naturally put back the same amount of weight. I have seen friends of mine who have been on the same program manage to keep the weight off after a year, so it is possible, as it's all about wise food choices and portion control.

Happy Call Pan Recipe - Curry Chicken

I have been wanting to having curry chicken for a while now, when I found out a friend had cooked chicken stew using happy call, I decided maybe I should try curry chicken using the Happy Call Pan. 


Curry Chicken Recipe using Happy Call Pan
2 tablespoon A1 curry sauce
1 chicken thigh deboned 
3 small russet potatoes
2 carrots (optional)
1 small sweet potato (optional)
Cherry tomatoes (optional)
No sugar soya milk 

Since I don't like onions nor frying them, and neither am I able to take coconut milk, so I decided to use soya milk as a replacement.

First I cubed and boiled the potatoes, carrots, sweet potatoes for about 10 minutes with salt in a separate pot. Once it was done, I mixed in some water with the curry paste until it started by bubbling in the Happy Call Pan. Then I added the chicken and the rest of the ingredients (potatoes) and topped of with soya milk. I would check occasionally that the sauce didn't try up, and when it did would add more milk. And in just 15-20 min (or when chicken is cooked the dish is done) I had my very own healthy concoction of Curry Chicken! I didn't know it was that easy, then again I took many shortcuts like not frying the onions and using curry paste. I added carrots, sweet potatoes and some cherry tomatoes for some variety but that's entirely up to you.

I also realized that the soya milk needed to be warm and not direct from the fridge when added into the cooking process to prevent curdling from happening (lesson learnt!) 


Happy Call Pan Recipe - Fried Rice with Salmon

I had some leftover stir fried Salmon in the fridge and decided to play with my food one day which ended like a meal that was a cross between a Risotto and Mui Fan (wet fried rice).


Fried Rice Recipe using Happy Call Pan
2 tablespoon Prego tomato paste 
Pepper, soya sauce to taste
2 eggs
Frozen mix vegetables (as much as you like)
Water - enough to cover the rice 
Overnight rice
Overnight fried onion with salmon 

Bring everything to boil, when it does, add in 2 beaten eggs. Stir frequently until everything dries up. Throw in some cheese if you like before eating! The taste was pretty good actually. It feels like I am eating Western Fried Rice, the healthy version without oil. 

Happy Call Pan Recipe - Scrambled Egg with Soyabean and Mixed Vegetables

Once again I had a surplus of eggs at home and decided on creating an omelette. However because there was no oil, the dish in a way had to be changed midway to scrambled eggs with soya beans (Tempeh) and frozen mixed vegetables. 


Scarmbled Egg Recipe using Happy Call Pan
3 eggs beaten with a pinch of salt and pepper
Mixed frozen vegetables (as much as you want)
Soybean (tempeh)

Pour in beaten eggs into heated Happy Call Pan. Add in mix vegetables and tempeh, and watch it cook. Once the egg is almost cooked then start to scramble the egg. When the egg is cooked, you are ready to serve. This is one simple and healthy meal under 10 minutes.

Happy Call Pan Recipe - Stir Fried French Beans with Tofu and Fish Cake

In the attempt to lead a healthier and fuss free lifestyle, and in between all the feasting over the weekends, has been the attempt to cook simple one pot meals. Meals that essentially did not include oil as that would stink up the entire house. 

I was blessed with a Happy Call Pan, which is 2 non-stick pans joined together, allowing for minimal oil and meals cooked in a short time.

Today I prepared a really easy dish, a dish mom cooks up pretty often, but she does it with garlic and oil. All I did was throw all the ingredients together with some soya sauce and water and let it cook for a couple of minutes (depending on how cooked you like your vegetables to be). 


Stir Fried French Beans with Tofu and Fish Cake Recipe using Happy Call Pan
1 square Tofu (Tau Kuah - the firmer of the family)
1 bunch of mushrooms (any kind, I prefer golden mushrooms)
1 bunch of french beans (cut up of course)
2 fish cake (or as many as you like)
A dash of soya sauce and water

That's it! What a simple dish to make that contains both vegetables and tofu.
