Happy Call Pan Recipe - Spanish Omelette

Ever since my trip to Barcelona, the simple Spanish Omelette has caught my attention as a beautiful breakfast food or tapas item. I have been thinking of recreating this dish for ages but because of the huge size of the dish it took a party to make an attempt at it. I used little oil with the base from an earlier steaming of sausages and wiped the top part of Happy Call Pan later with Olive Oil when I had to flip. Enjoyed this meal a lot, tho it I think I have to experiment again to make this thicker, and add more oil. 

Ingredients
5 large eggs 
1 tablespoon water to egg (recommended by expert) 
5 potatoes
1 onion
Salt and pepper to taste

Directions
Chop up onion and potatoes
Fry both till soft on low heat till almost cooked
Add in egg mixture (egg, salt, pepper, water)
When cooked, scrape base to allow an easier flip to other side

Lessons learnt
Some recommend to take potato and onion out and coat in egg mixture
Better use oil on both sides so won't stick
If the pan stuck flip back again at the end to show the nicer side





Happy Call Pan Recipe - Korean Spicy Braised Chicken

I think I am beginning to figure how to cook with my Happy Call Pan. This time I wanted some zing with my meal. I decided to purchase a bottle of Korean spicy sauce for braised chicken at the nearby Korean Lotte Mart at Telok Ayer Street. I was pretty impressed with the result even though I did not add potatoes as the recipe suggested.


Korean Spicy Braised Chicken Recipe using Happy Call Pan
1 cup water bring to boil
2 tablespoon of Korean sauce 
2 tablespoon of soya sauce
Dash of sugar 
Chicken thigh

Once water boils, add in chicken and sauces and let everything simmer till sauce almost dries up, this takes around 20 minutes or longer if you have the time. It's tasty and yummy so much that I wanted to slurp up the sauce!


Happy Call Pan Recipe - Steam Salmon

Although the proper way of steaming would be to add a plate into the Happy Call Pan, the thought of having to wash another plate meant more time wasted in cooking, hence I experimented if the same steaming effect will work without an added plate and it does! 


Steam Salmon Recipe using Happy Call Pan
1 cup of water to boil 
Add in salmon 
Squeeze in lime or lemon
Add in spices (any spice you prefer example black pepper, herbs, thyme)
Add in 1 tablespoon soya sauce (optional)
Cook until fish is cooked through around 10-15 minutes

Such simple cooking and such a healthy fare than you can have it as often as you like! 

Happy Call Pan Recipe - Tamago

Using a Korean pan to cook Japanese Tamago egg is an interesting experiment, like the pairing of 2 major cities. I needed to clear my eggs one day and decided to try cooking Tamago using the Happy Call Pan. The result came out okay, but I had forgotten seasoning, and poured too thick between layers, so hence this requires another try. 


Tamago Recipe using Happy Call Pan
5 eggs
2 tablespoon Mirin
Pepper, salt, sugar to taste

Wipe pan with some oil. When it heats up add in a small layer of egg, when it is about to fully cook, flip half the egg to one side, and on empty side add more egg. Repeat process until egg mixture all finished. How simple is this meal! Add in some salad and this will be one simple Fusion meal cooked in under 15 minutes.

Happy Call Pan Recipe - Curry Chicken

I have been wanting to having curry chicken for a while now, when I found out a friend had cooked chicken stew using happy call, I decided maybe I should try curry chicken using the Happy Call Pan. 


Curry Chicken Recipe using Happy Call Pan
2 tablespoon A1 curry sauce
1 chicken thigh deboned 
3 small russet potatoes
2 carrots (optional)
1 small sweet potato (optional)
Cherry tomatoes (optional)
No sugar soya milk 

Since I don't like onions nor frying them, and neither am I able to take coconut milk, so I decided to use soya milk as a replacement.

First I cubed and boiled the potatoes, carrots, sweet potatoes for about 10 minutes with salt in a separate pot. Once it was done, I mixed in some water with the curry paste until it started by bubbling in the Happy Call Pan. Then I added the chicken and the rest of the ingredients (potatoes) and topped of with soya milk. I would check occasionally that the sauce didn't try up, and when it did would add more milk. And in just 15-20 min (or when chicken is cooked the dish is done) I had my very own healthy concoction of Curry Chicken! I didn't know it was that easy, then again I took many shortcuts like not frying the onions and using curry paste. I added carrots, sweet potatoes and some cherry tomatoes for some variety but that's entirely up to you.

I also realized that the soya milk needed to be warm and not direct from the fridge when added into the cooking process to prevent curdling from happening (lesson learnt!) 


Happy Call Pan Recipe - Fried Rice with Salmon

I had some leftover stir fried Salmon in the fridge and decided to play with my food one day which ended like a meal that was a cross between a Risotto and Mui Fan (wet fried rice).


Fried Rice Recipe using Happy Call Pan
2 tablespoon Prego tomato paste 
Pepper, soya sauce to taste
2 eggs
Frozen mix vegetables (as much as you like)
Water - enough to cover the rice 
Overnight rice
Overnight fried onion with salmon 

Bring everything to boil, when it does, add in 2 beaten eggs. Stir frequently until everything dries up. Throw in some cheese if you like before eating! The taste was pretty good actually. It feels like I am eating Western Fried Rice, the healthy version without oil. 

Happy Call Pan Recipe - Scrambled Egg with Soyabean and Mixed Vegetables

Once again I had a surplus of eggs at home and decided on creating an omelette. However because there was no oil, the dish in a way had to be changed midway to scrambled eggs with soya beans (Tempeh) and frozen mixed vegetables. 


Scarmbled Egg Recipe using Happy Call Pan
3 eggs beaten with a pinch of salt and pepper
Mixed frozen vegetables (as much as you want)
Soybean (tempeh)

Pour in beaten eggs into heated Happy Call Pan. Add in mix vegetables and tempeh, and watch it cook. Once the egg is almost cooked then start to scramble the egg. When the egg is cooked, you are ready to serve. This is one simple and healthy meal under 10 minutes.
